Episode-96- Make The Best Grilled Pizza At Home


Charcoal Chimney – The Easiest and Cleanest way to start charcoal.  No lighter fluid needed and it uses less charcoal.

This is the best pizza recipe in the world. I know because I have lived all over this wonderful planet and this is the only way I can enjoy pizza anymore. Before I could enjoy pizza from most places. Not any more. Once you try this pizza you will want nothing less in the future. It is a lot of work but worth it and you will amaze your family and friends.

Ingredients – Please refer to the Metric Kitchen for conversions

Pizza Dough

  • 2 teaspoons active dry yeast
  • 1 ½ cup warm water
  • 1 tablespoon white sugar
  • 2 teaspoons kosher salt
  • 1 tablespoon olive oil
  • 4 cups all-purpose flour – I prefer 3 cups all purpose and 1 cup wheat flour
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil from the garden
  • 1 tablespoon chopped chives

Grilled Pizzas

  • ½ cup olive oil – have a brush handy
  • 2 cups tomato sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup smoke Virginia ham or salami
  • 1 cup sliced mushrooms
  • 2 cups cooked Italian sausage
  • 1 cup chopped broccoli
  • 1 cup sliced eggplant
  • 1 can anchovies
  • ½ cup basil paste

Start the dough by adding the yeast and sugar to the water. It will get frothy in about ten minutes. At that time add the salt, olive oil, and sift in the flour one cup at a time stirring all the while. Knead the dough by rolling it around on a floured cutting board for about 10 minutes until the dough no longer sticks to your fingers. Spread a little olive oil in a large bowl and place the ball of dough inside. Cover with damp towel.

After an hour fold the basil, chives and garlic into the dough. Cover with the towel. The dough will be ready in about 2 hours.

To make the pizzas take a handful of the dough and flatten on a lightly floured cutting board. Use your hands and rolling pin to spread the dough to the size of the pan. Add flour as necessary to keep dough from sticking. If making several pizzas stack the pizza doughs on floured cutting boards.

Heat the grill with charcoal or gas only on one side. I prefer using a charcoal grill because the flavor and maneuverability is much better than with a gas grill. When the coals or gas grill is ready add a pizza dough to the hot side. It will quickly become puffy. Slide a spatula under and turn it for even cooking if necessary. It will be ready in about 45 seconds. It’s done when only slight grill marks appear on the bottom. Flip the dough over to the cool side with the grilled side facing up.

Brush with olive oil, add sauce, cheese and ingredients of your choosing. Close lid and wait 5 mintues. Open lid and turn pizza 180 degrees and close lid again for 5 minutes.
Your pizza should now be ready. Slice and enjoy. Mama Mia!!!
