Currently there are more herbs than can be stored in the refrigerator and used before spoiling. There’s a rich bounty of basil, chives, cilantro, oregano, parsley, rosemary, sage and thyme. All are growing faster that we can use them.

A couple of years ago I got turned on to dehydrating fruit, vegetables and herbs and soon became a fan of Tammy Gangloff  who manages Dehydrate2store.com and she has own dehydrate2store youtube channel. I took notes on all of Tammy’s methods and began storing herbs and vegetables like broccoli , carrots, corn and hot peppers. I was using an efficient method for dehydrating and recently purchased the Nesco American Harvest snackmaster dehydrator.

So far we have dehydrated and stored large leaf parsley, curley leaf parsely, oregano, thyme, chives, basil, corn, peas,  hot peppers, sage and shisou which is a type of Japanese mint. We’ve made beef jerky and we loved it. . It took about 15 hours for the jerky to dry properly and let me tell you it was wonderful. We jerked a pound and that yielded a little more than a 1/3 pound of jerky. We made the traditional flat strips as well as little slim jim looking jerky treats.

Avoiding waste, Emergency preparedness, high food cost preparedness, extending my harvest and generally having fun making things small is all part of why I dehydrate. You should give it a try too. Let me know if you have any questions about dehydrating or food storage in general. You can e-mail at TonyTeolis@todolisthome.com. List to the podcast for more details and my philosophy and practice of storing food and being responsible.
